Vegan Pizza Day!

Happy Vegan Pizza Day, everyone!  As I was thinking about (well, literally dreaming about) what I would like to make for vegan pizza day, I realized that it's been a little bit since I actually had pizza (a little bit being two weeks!). I don't know how that much time could go by without enjoying a little pizza goodness.

Since apparently every day is not vegan pizza day, I wanted my pizza extra special. And since it's summer, it needed to be extra green. I whipped up my favorite gluten free pizza crust for the occasion, but this is not a necessity.  Store bought crust is totally fine. 

Now on to the fun stuff, the toppings:
basic tomato sauce (canned tomato puree mixed with sea salt, dried onion, garlic, thyme and basil)
zucchini (thinly sliced, salted and set aside for 30 minutes to remove moisture)
kale (Russian and curly! chopped and lightly steamed for 5 minutes)
broccolini (same as kale)
cashew cream (1/2 C soaked cashews, blended with about 2 T water, 1/2 tsp apple cider vinegar, 1 T nooch, 1/8 tsp onion powder, 1/4 tsp salt, dash of cayenne)
avocado (sliced and added AFTER baking)

Bake in 450 degree oven for 15 - 20 minutes, until crust is firm and slightly crispy on the edges. Let cool for five minutes and add sliced avocado. Gobble as quickly as you can, and attempt to save some for the boyfriend who is sadly stuck at work on this most amazing national holiday!
