Ice Cream for Breakfast!

Sweet, creamy and cooling. These three words are the perfect way to describe this Berry Breakfast Ice Cream. Yup! Ice Cream for Breakfast!  :-)

If you get right down to it, ice cream is really not too different from a smoothie, just less liquid-y. This is a great treat, especially to trick the kids (and kids at heart) into eating something good for them. Plus, it's so easy to make, you can even have the little ones make it themselves. No preparation involved, just a blender. And let's be honest, that's convenient no matter what your age!

You can make it with all strawberries or mix up the berries.  I don't recommend all blueberries, however, as the color will come out kind of on the grey, less attractive side.

As a little teaser for what's to come, you'll see this ice cream pictured again in a few days when I use it as a topping for Letter M.



Berry Breakfast Ice cream
Ingredients
1/4 of a ripe avocado
1/4 Cup frozen strawberries
1/4 Cup frozen blueberries
1/4 cup frozen or small handful fresh spinach
2 Tablespoons apple sauce


Directions 
1. Add everything in a blender or food processor and puree until smooth. Scoop into bowls and top with granola.
