Vegan Easter Brunch Recipes

It may be a known fact by now that I am not a big breakfast person.  At least in the sense of classic breakfast foods (cereals, yogurt, porridge, oatmeal, etc).  However, make it something heartier, serve it a little later in the morning and call it brunch, and I'm all over it!

With Easter just a few days away, here's a round up of some of my favorite brunch friendly recipes.  I hope some of these make it on to your Easter Brunch menu.  Leave a comment to let me know if they do!


Carrot Cake Waffles  - Top with vegan cream cheese frosting for extra decadence!


Soy Free Vegan Quiche - I made this quiche for The Sexy Vegan last time he came over for brunch;  it received his stamp of approval, and your guests will approve too.



Ratatouille - Slow simmered vegetables are great served warm or cold.



Blueberry Muffins - add a touch of lemon; sub raspberries or strawberries. Muffins are quintessential for a brunch spread.



Vanilla Bean Mousse Tart  - Top with seasonal fresh berries; the pastel green screams Easter colors.



French Toast - the linked recipe is for pumpkin french toast, but the batter and method applies universally. Try it with fresh strawberries.
