Vegan grilled cheese has come a long way as far as recreating that ooey gooey-ness of real cheese. Commercial imitation cheese products, like Daiya and Teese, among others are re-creating the wheel (pun intended!) when it comes to non-dairy alternatives. Personally, I prefer a good nut based cheese spread, preferably homemade, slathered between two slices of grilled bread. There's something just so satisfying about it to me that is almost reminiscent of melted goat cheese.
